Annotation

 

Whey and its products have nutritional, dietary, therapeutic, and preventive value. Whey has a high content of mineral salts; their composition is close to their composition in whole milk. Thus, whey is a biologically valuable food product that can be used to make a wide range of products, including dietary products.

Thus, the value of whey as a dairy raw material necessitates the creation of products based on whey and vegetable raw materials.

The possibility of using medicinal and technical raw materials (products of elderberries processing) for the production of foods based on whey as a source of vitamins and minerals has been proved. The technology of new types of phytosyrups for the production of whey products has been developed. Experimentally, it was found that it is advisable to make phytosyrups in a semi-hot way.

Organoleptic, physicochemical and microbiological parameters of fresh elderberry juice were studied. The study of the chemical composition of the elderberry raw material makes it possible to conclude that there is a balanced complex of biologically active substances in it. The analysis of chemical components allows us to conclude that the carbohydrates in elderberries are mainly glucose (grape sugar) and fructose (fruit sugar). It contains a small amount of sucrose. The different ratios phytosyrups effect on organoleptic, physicochemical and microbiological indices of drinks based on cheese whey was studied. The best results are obtained in the manufacture of beverages at a 15 to 85 ratio of syrups to whey.

Agrarian Science and Food Technology  Established in 1994 under the name of the Collection of Scientific Works of VSAU.
