Annotation

In the production of dairy products in the modern food industry, various nutritional additives are used, the purpose of which is, first of all, to extend the shelf life of the product, improve the organoleptic and physico-chemical parameters. Nutritional Supplements (HD) are natural or synthetic substances that are deliberately introduced into foods in order to provide them with the necessary properties and are not used independently in the form of products or ordinary food components. For the main purposes of introducing into a food product, which are determined by their technological functions, food additives are subjected to a certain classification: improving the appearance of the product (dyes, stabilizers, bleaching substances), taste regulation (flavors, sweeteners, acidity regulators), consistency regulation (thickeners, gel formers, stabilizers, emulsifiers, foaming agents), increasing the shelf life of the product (preservatives, antioxidants, moisture retainers, film formers). At this stage, such technological classes of nutritional additives are already around 45, which requires an additional level of classification. Nutritional supplements, like any chemical compound, may have a toxic effect on the food product, so food safety is given particular attention. All nutritional supplements are under constant supervision. When using any food additive, it is necessary to withstand their exact dosage and conditions of application. When changing the conditions of use and availability of new scientific information, the status of the food additive may be changed. All nutritional supplements are under constant supervision. To date, Ukraine has not created an effective mechanism for comprehensive control over the production and use of nutritional supplements. The current system allows only selective checks of some manufacturers, which does not allow to make a complete picture of the volumes of use of food additives in Ukraine and their compliance with the list approved by the Cabinet of Ministers.

Agrarian Science and Food Technology  Established in 1994 under the name of the Collection of Scientific Works of VSAU.

According to the Resolution of the Presidium of the Higher Attestation Commission of Ukraine of September 11, 1997, this publication has acquired the status of a professional, in which it is allowed to publish the main results of the dissertation research in the fields of "Agronomy", "Animal engineering" and "Economic Sciences".

In 2001-2014 it was published under the title "Collection of scientific works of Vinnytsia National Agrarian University".

Since 2015 it is:"Agricultural Science and Food Technologies".
