Annotation

Morphological composition of pig carcasses for different types of feeding, the duration of maintenance on growing and pre-slaughter live weight was studied in the conditions of industrial technology of pork production. High rates of carcass meat production were determined for all weight categories.

For live weight of 100 and 110 kg, there was no statistically significant difference between meat content in the carcasses all groups of pigs. Fat content of pig carcasses at 110 kg live weight was slightly higher than at slaughter in 100 kg and was slightly higher than traditional growing period for both types of feeding. According to the dry type of feeding, somewhat higher bone content in animal carcasses was observed for both terms of rearing. The ratio of meat: fat compared to slaughter for a live weight of 100 kg was 0,02-0,10 units worse and also proved to be the best by liquid type of feeding and shortening the duration on growing, the best ratio of meat to bones was determined.

According to results of deboning carcasses with pre-slaughter live weight of 120 kg, obtained data indicate about significant decrease of meat content in them compared with carcasses of slaughtered pigs on live weight of 100 and 110 kg.

The best meat content was set for a liquid type of feeding and both terms on growing. The bone content in carcass at slaughter of pigs with live weight of 120 kg was significantly lower compared to the previous weight categories. In terms of groups, the proportion of bones in carcasses with a pre-slaughter live weight of 120 kg did not differ significantly.

The proportion of adipose tissue in carcasses of pigs grown in a dry type of feeding was higher compared to liquid, while the period of rearing had little effect on this indicator compared to the carcasses of animal slaughtered live weight of 100 and 110 kg. At the same time, the ratio of meat-to-bones for this weight category was the best compared to the previous weight categories.

The results of studies showed that the morphological composition of pig carcasses was largely dependent on pre-slaughter live weight, further on the type of feeding and the terms on growing.

Agrarian Science and Food Technology  Established in 1994 under the name of the Collection of Scientific Works of VSAU.

According to the Resolution of the Presidium of the Higher Attestation Commission of Ukraine of September 11, 1997, this publication has acquired the status of a professional, in which it is allowed to publish the main results of the dissertation research in the fields of "Agronomy", "Animal engineering" and "Economic Sciences".
