Annotation
A generalization of data on the current state of honey production in Ukraine and its place
on the world market has been carried out. Beekeeping products can, by their properties, satisfy the
needs of the consumer in high quality and nutritious foods. Recently, domestic industry is oriented
on natural raw materials and bee honey is used in the food industry, in the manufacture of
confectionery, various beverages, pharmacological preparations, cosmetics, dairy products.
According to the State Statistics Service, Ukrainians for a year eat about 30 kg of sugar, and honey
- only 0,6-0,65 kg. Despite the similar calorie content of honey and sugar, these products are
completely different. Today Ukraine is the fifth largest producer of honey in the world and is the
leader in Europe. The demand for honey in the world exceeds supply. In 2018, volumes of world
trade in honey decreased by 3% - to 689 thousand tons and 7% in value terms. Ukraine has left the
top three world exporters and has decreased its supply of honey to the foreign market by 27%,
while the share of total exports has dropped to 7%. Ukrainian honey is exported to 35 countries of
the world. There are 69 officially registered exporting companies in Ukraine. Starting from 2013
and by 2016 statistics of Ukraine declare the decline in production of honey by 19.6%. In 2017,
farms of all categories produced 6937 tons, or 11.7% more than in the previous year. Up to 98% of
honey is produced in households and only 2% in agricultural enterprises. The main producers of
Ukrainian honey are 11 oblasts, which provide production to 70-75%, namely Vinnytsya, Zhytomyr,
Khmelnytsky, Mykolaiv, Dnipropetrovsk, Zaporozhye, Poltava and Kirovogradskaya, Sumy,
Kharkiv and Donetsk. The number of bee families in 2017, against the previous 2016, increased by
158.6 thousand.

Agrarian Science and Food Technology  Established in 1994 under the name of the Collection of Scientific Works of VSAU.

According to the Resolution of the Presidium of the Higher Attestation Commission of Ukraine of September 11, 1997, this publication has acquired the status of a professional, in which it is allowed to publish the main results of the dissertation research in the fields of "Agronomy", "Animal engineering" and "Economic Sciences".

In 2001-2014 it was published under the title "Collection of scientific works of Vinnytsia National Agrarian University".

Since 2015 it is:"Agricultural Science and Food Technologies".
